Valdespino Inocente Fino Sherry is a wine steeped in history and tradition, as Valdespino is the oldest known sherry bodega (1430!). It is long aged according to the traditional “solera” system, and is the only fino sherry aged in American oak casks. Production Notes
This high-quality sherry is made from 100% Palomino Fino grapes. Valdespino Inocente is the last remaining Fino Sherry that is still barrel-fermented with indigenous yeasts. It is also the only Fino Sherry wine made from grapes harvested from a single vineyard – the Macharnudo Alto. Here the vines grow at a high-altitude, on slopes of pure Albariza chalk which imbue the Inocente solera with its hallmark minerality. The sherry wine is fermented in 600 liter wooden casks with no added yeast, and aged for a decade under a veil of ‘flor’, following the traditional Solera y Criadera system.
