About Copalli Organic Cacao Rum
Only three ingredients are used to craft Copalli Cacao Rum: Fresh pressed juice from locally grown, organic sugar cane, yeast, and rainwater. The Copal Tree Distillery is designed to be zero waste, and this cacao rum is proudly crafted to be free of additives, or colors. The sugar cane juice is distilled in a column still and infused with roasted locally-grown organic cacao nibs. The result is a unique cacao rum that tastes delicious on the rocks or mixed in cocktails. Â
Tasting Notes for Copalli Organic Cacao Rum
Like Belizean chocolate, the taste is of berries and a rich, balanced cacao flavor.
Suggested Serves
- Copalli Espresso Martini 
- 1 ½ oz Copalli Cacao 
- ½ oz Coffee Liqueur 
- 1 oz. Espresso 
- ½ oz Simple Syrup 
- Organic Cacao powder  Â
- Method: Add ice and shake. Strain into a chilled cocktail glass, top with a sprinkle of cacao powder.  
- Café Copalli
- 2 ounces Copalli Cacao
- 1 ounce La Colombe Cold Brew (Brazilian) in a can
- .5 ounce Oloroso Sherry
- .5 ounce heavy cream
- .75 simple  syrup
- Method: Shake and strain over one large cube in a double rocks glass Garnish with grated nutmeg
- Copalli Club
- 1 ½ oz. Copalli Cacao
- ½ oz. Dry Vermouth
- ½ oz. raspberry jam
- ½ oz. lemon juice
- ½ egg white
- Fresh raspberries
- Method: Add all ingredients into shaker. Shake without ice first. Then add ice and shake vigorously. Strain into a coupe glass. Garnish with 2 raspberries on a pick.

Copalli Rums are crafted at the Copal Tree Distillery in Southern Belize, which is designed to have as low a carbon footprint as possible.
